It is not always the easiest meal to eat healthily
Lunchtime can be a very tempting time to have a little treat.
When you know you have a healthy dinner later that evening it can be incredibly easy to divulge in fast food or a sneaky unhealthy meal when you nip out for lunch.
However, there are so many meals you can prepare yourself that are quickly and easy.
Whenever starting a diet and searching for healthy lunch options, many of us will be faced with pages and pages of salads.
Some people do not actually enjoy salads or may have one lined up for dinner later that day so are looking for something a little different.
Here is a fantastic recipe for lunch for those looking to eat well but not munch on a salad.
Potato and asparagus tart
400g potatoes, preferably Jersey Royal
2 tbsp wholegrain mustard
1 large egg
190g grated gruyere
200g soured cream
175g of butter
300g of plain flour
How to make -
1) Early morning before baking, place the butter in the freezer.
2) Mix the flour in a large bowl and mix in a pinch of salt and cheese. Grate in the frozen butter and stir it in. Ensure all strands of butter are coated in flour then stir in 125ml of cold water. Add more if the mixture looks dry. Bring the pastry together in your hands then wrap it in cling film and leave to chill for 30mins.
3) Boil a large pan of water then add the potatoes, boiling until tender. Drain well, slice and leave to cool.
4) Heat your oven to 200C / 180C fan / gas 6, with a baking tray inside. Dust baking parchment with a little flour and roll out the pastry into a circle roughly 30cm wide and of 2 £1 coins in thickness. Brush the pastry with mustard and arrange the potatoes, asparagus and majority of the gruyere in layers on the pastry, leaving a border. Season and fold the edges to close in the vegetables and cheese. Whisk the soured cream and the egg with seasing and pour this into the centre of the tart. Sprinkle over any remaining cheese then bake in the oven for 30mins until golden.
